- 4 carrots
- 50 g sunflower seeds
- 1 tbsp sesame seeds
- Aromatic herbs (we used bay leaf, rosemary and parsley)
- 1 tbsp chia seeds
- 100 ml water
- 5 sun-dried tomatoes
Rehydrate the dried tomatoes, and in the meantime pulverize the sunflower seeds with the sesame seeds and set aside.
Mix the chia seeds with the water and let them double in volume.
Run the carrots, rehydrated tomatoes, herbs and salt through the blender. Combine all the ingredients and mix well.
Form the mixture into little balls and sprinkle with a few sesame seeds.
If you have a food dehydrator, set to 40 degrees, place the meatballs inside and leave overnight.
If using a ventilated oven, set it to the lowest temperature and cook fora couple of hours.
If necessary, turn the meatballs and cook till firm.
