Raw Vegan Sushi

A fresh and tasty sushi, even richer in omega-3 than salmon.

Ingredients (for 4 people)

  • Florets of 1 cauliflower (2 if small)
  • 1-2 carrots
  • 2 tbsp Ambrosiae Chia Seeds
  • 2 tbsp Ambrosiae Goji Berries
  • 1-2 avocados
  • Fresh garlic or shallot
  • Lemon juice or rice wine
  • 1-2 tomatoes
  • Soy sauce
  • 2-3 tbsp extra-virgin olive oil
  • Nori seaweed in sheets
  • Bamboo sushi roller



Cut off only the florets of the cauliflower in tiny pieces, or pulse them in a blender so that the pieces are the size of a grain of rice.

Drizzle with soy sauce, lemon juice (or rice vinegar), oil, minced garlic (or shallot). Add as much ripe avocado as necessary to bind the ingredients and create a moldable paste, along with a bit of Citrus & Chia Seed Vinaigrette.

Spread the mixture longitudinally on a sheet of nori, add the goji berries, julienned carrots, sliced avocado and diced tomatoes. Roll the nori with the bamboo mat. Cut into discs and arrange on a plate.
