Kale and Citrus Salad

Today we’re going to make a salad based on the king of greens, kale. This variety of cabbage is one of the most vitamin- and mineral-rich foods in nature. So don’t hold back!

Ingredients (for 4 people)

  • 400 g kale
  • 1 handful cashews
  • 1 handful Ambrosiae Goji Berries
  • 2 oranges: 1 juiced and 1 sliced
  • 1 lime (juiced)
  • 1/2 lemon (juiced)
  • Extra-virgin olive oil
  • Salt to taste


Remove the central rib from the kale leaves and tear the rest by hand into bite-size pieces. Add the juice from the 3 citrus fruits, olive oil and salt. Massage the leaves for a minute or two to soften them. Add the cashews, Ambrosiae Goji Berries and orange slices.

A salad super-rich in vitamin C, vitamin A, iron and antioxidants.
