Halloween muffins

Trick or treat? ...For this recipe you’ll need a cupcake pan, ideally but not necessarily with16 paper liners.

Ingredients (per 16 muffins)

  • 250 g Ambrosiae porridge mix
  • 50 g yellow corn meal
  • 50 g corn starch
  • 50 g cane sugar
  • 80 g coconut oil (or your favorite vegetable oil)
  • 16 g baking powder (or cream of tartar)
  • 1 apple
  • 150 g butternut or other orange squash




Got everything you need?… Let’s get started!

Cut the apple, half the squash into small cubes, grate the other half of the squash.

Combine with the water, oil, sugar and the Ambrosiae porridge mix
Add the cornstarch and cornmeal.
Mix the batter and leave to rest for at least 10 minutes.
Incorporate the baking powder. Pour the batter into the paper liners and decorate with a few cubes of squash.

Bake in a preheated oven at 180ºC for about 45 minutes.
