Citrus and Chia seeds Vinaigrette

A vinaigrette rich in omega-3 and vitamin C, versatile and easy to make.


  • 3 tbsp Ambrosiae Chia Seeds
  • 2 tbsp lime juice
  • 1 tbsp lemon juice
  • 1 tbsp orange juice
  • 1 tbsp mandarin orange juice
  • 1/2 cup water
  • 1 garlic clove
  • tarragon
  • 2-3 tbsp extra-virgin olive oil
  • Salt and pepper (optional)




Combine all the ingredients in a glass or ceramic bowl (best to avoid metal), mince the tarragon, preferably fresh, and cut the garlic clove in half (you’ll want to remove it before serving).

Mix together with a spoon and refrigerate for at least 30 minutes so the chia seeds can absorb the liquids.

Remove the garlic and use it to dress a salad, for dipping raw vegetables, or however else you wish.
