Chia seed mayonnaise

This ‘raw vegetarian mayonnaise’ is really easy to make and can be enjoyed with vegetables, salads, veggie meatballs, sandwiches, crostini… the list goes on!

Ingredients (for 4 portions)

  • 2 heaping tbsp chia seeds
  • 30 ml water
  • Juice of half a lemon
  • 100 ml olive oil
  • 1/2 tsp turmeric (optional)
  • Salt to taste



  1. Pulverize the chia seeds finely in a blender.
  2. Add the water and lemon juice,
  3. blend and allow to rest for 10 minutes.
  4. Add the oil and blend.
  5. Add the turmeric and salt and blend again.If the mixture is too dense, add water 1 tablespoon at a time till reaching the desired consistency. Enjoy right away, or conserve in the refrigerator for a couple of days.
