Ingredients (for 4 people)
- 400 g kale
- 1 handful cashews
- 1 handful Ambrosiae Goji Berries
- 2 oranges: 1 juiced and 1 sliced
- 1 lime (juiced)
- 1/2 lemon (juiced)
- Extra-virgin olive oil
- Salt to taste
Remove the central rib from the kale leaves and tear the rest by hand into bite-size pieces. Add the juice from the 3 citrus fruits, olive oil and salt. Massage the leaves for a minute or two to soften them. Add the cashews, Ambrosiae Goji Berries and orange slices.
A salad super-rich in vitamin C, vitamin A, iron and antioxidants.
